In the test kitchen the flying chefs prepare for exceptional situations. Flying chef Stephan Werner tells us about experiments and his favourite dish.

Many ingredients and a flying chef: In DO & CO’s test kitchen the chefs prepare for exceptional situations on board. „On certain flights the meals are cooked on board directly – which of course needs some preparation. In the test kitchen we try out the various ingredients. All menus are cooked once“, flying chef Werner Stephan explains.

 

 
 
Special guests, special menus: when there’s a high visit, there are always special menus – and they need to be prepared, too. Also in this case the test kitchen tries out the various menus for the journey. „I strive to prepare everything as tasty as possible, and so far they always liked it!“ ;)

 

 

 

 

Testing, testing, testing

 

One other task of the test kitchen is to prepare trays with different settings, which are then photographed. With the help of these pictures the decision is taken which setup to use for the trays on a certain flight. „Each tray is photographed individually, so that we can later on decide on the setting“, says Stephan.

 

 

 

 

 

 

 

 
 

 

 
 

 
 

 
 
 
 
 
 
 
 
 
 
 
 
 

This leaves one last important question to answer: What is then the favourite dish of a flying chef? Stephan Werner likes it simple: „I’m a rather down-to-earth person, roast pork will perfectly do!“
